Gingerbread Cookie Recipe

Ingredients:

• 1 cup oatmeal

• ¾ cups almonds

• ¼ cup walnuts

• 1 cup flour

• 1 tsp. ginger

• 1 tsp. baking soda

• ½ tsp. cinnamon

• ½ cup butter (1 stick)

• 1 cup brown sugar

• 1 egg

• ¼ cup molasses

Directions:

1. Set oven to 350 degrees

2. Place the oatmeal, almonds and walnuts in a food processor and process until the ingredients form a fine powder

3. In a separate, medium- sized bowl, mix together the flour, ginger, baking soda and cinnamon

4. Add the first set of ingredients to the second, stir together and set aside

5. In a large bowl (separate from the other bowl) add the brown sugar, butter (softened a little), egg and molasses

6. Fold the dry ingredients into the wet ingredients until perfectly blended

7. With a small ice cream scooper, scoop out little bits of the cookie dough and put on a greased cookie sheet.

8. Place cookies in oven and bake for 15 min. or until golden brown

9. Cool for 10 min. Then eat.
